Introduction

You will have the opportunity to test your skills in areas such as hazard analysis, critical control points, food safety programs, and regulatory compliance. It’s a valuable tool for individuals working or interested in the food industry, as it allows you to assess your proficiency and identify areas for improvement.

The assessment contains three parts. The first part being knowledge questions presents different scenarios and asks you to choose the best response based on food safety principles and best practices. The second and third parts ask you to demonstrate your skills in an industry setting.

Course Access

Assessment must ensure access to the following equipment, fixtures, and documents:

  • Commercial grade work bench, sink
  • Refrigeration unit
  • Storage facilities
  • Food handler gloves, serving utensils
  • Temperature monitoring device
  • Cleaning materials and equipment
  • Appropriate facilities for handwashing:
  • Designated hand washing sink
  • Antiseptic liquid soap
  • Single use towels
  • Warm running water
  • Food ingredients and ready to eat food items
  • Receptacles for storage and display purposes
  • Serving utensils
  • Appropriate changing facilities
  • Personal protective equipment relevant to job role
  • Appropriate facilities for handwashing
  • First aid kit
  • Ready-to-eat food items

Access to the following key text:

  • Current plain English regulatory documents distributed by the national, state, territory or local government food safety authority
  • Australia New Zealand Food Standards Code
  • Current organisational food safety programs, policies and procedures used for managing food safety.

Learning Results

Upon successful completion, you will achieve the following Units of Competency:

 SITXFSA005 Use Hygienic Practices for Food Safety

Learners who have successfully completed this Unit of Competency will be able to:

 

  • follow hygiene procedures and identify food hazards
  • report any personal health issues
  • prevent food contamination and cross contamination by maintaining personal hygiene during contact with food and food contact surfaces
  • report health issues and unhygienic practices.

 

SITXFSA006 Participate in Safe Food Handling Practices

Learners who have successfully completed this Unit of Competency will be able to:

 

  • read, interpret and follow food safety programs
  • store and prepare food safely
  • provide safe single-use items
  • maintain a clean environment
  • dispose of food safely
  • report food safety hazards
  • complete food-monitoring documents
  • calibrate and use temperature measuring devices
  • coordinate food handling tasks while taking into account food safety issues
  • address customer food allergy requests
  • take responsibility for food safety at an operation level.

 

Assessment Outcomes

Assessments in this course include:

  • Industry knowledge questions
  • Uploaded evidence of practical demonstration (as required)
  • Uploaded evidence of logbooks or other forms of evidence to support demonstration of competence  (as required)
  • Verbal assessment (if required)

IMPORTANT UPDATE

From 8 December 2023, all registered food businesses in the tourism, retail, hospitality, and catering industries across Australia must appoint a Food Safety Supervisor holding a food safety certificate (that has been issued within the last five years).

The SITSS00069  Food Safety Supervision Skill Set, will help you meet this requirement.
